Would this be fair to ask from my manager/employer?

I'm going to say yes and no. Showing enthusiasm is not bad thing but as you said the short time period that you have worked doesn’t show that you can do the job that you are told to do. My suggestion is to do the job as best and as hard as you can, show enthusiasm for the job you have than ask for more shifts, say in two weeks.
